“The potential for still wines in the Penedès region of Spain is on full display in the wines of Celler Pardas. Born in St. Sadurní d´Anoia, Ramon Parera and Jordi Arnan, oenologist and agronomist respectively, started the Celler Pardas project in 1996. The grapes are grown and wine made at the Can Comas estate. This is a very special property, located in the Alt Penedès region. It is a mixture of forest, vineyards, pasture, grain land, gardens, the Bitlles River, and a fresh water spring called Font del Cargol. Ramon and Jordi are not just proprietors of Can Comas, but also residents. They believe that they have an obligation to protect and conserve their vineyard land and the surrounding forest. They farm utilizing environmentally friendly agricultural practices. They do not irrigate their vines. They work the vineyards as little as possible, encourage natural growth and vegetal covers, and never use fertilizers. With the diversity of terrain on the Can Comas estate, it allows them to focus on a few different varietals, and thus a diverse range of wines. First and foremost, Celler Pardas is a winery with a great belief and investment in the Xarel.lo varietal. One of the main grapes used in the production of Cava, Ramon and Jordi believe that it is one of the most noble grape varietals in Penedès and Spain, and can produce a still wine of exceptional quality. There are three different wines at Pardas that showcase Xarel.lo. Two main types of soil can be found on the Can Comas estate. Stony, clay-calcareous soil, as well as alluvial soil both natural matches for Bordeaux varietals. In these areas, Can Comas grows Cabernet Franc, Cabernet Sauvignon, a little Merlot and Sumoll.”
