Heaps of scree resting on deep soils "Longeroies" is a word that probably comes from old French meaning "furrow". The parcel facing South and is the star climate of the AOC which will probably soon become a Premier Cru. No chemical materials are used since 1996. Arnaud employed traditional pruning system with simple guyot training. The land is ploughed by horses to avoid soil compaction. Trimming and trellising are done by lightweight tractors. Green harvest is done in adaption to the needs of each parcel to maintain the best leaf and fruit ratio. The grapes are strictly sorted – undergo triple sorting upon arriving at the estate. Arnaud destems 100% of his fruit and tastes everything every day during vinification. The wine is aged in oak barrels (30% new, from Tonnelleire François Frères) for 18 months on fine lees and is racked into stainless vats for the last couple months of elevage.
