"The vinification process is based on the paesant art of making wine that Soccorso has learnt form his father and in collaboration with the oenologist Antonio di Gruttola. The Irpinia is as follows , Wine pressing, removal of grapes stalk, alcoholic fermentation, maceration 20 days at room temperature. Ageing in wood ( 14 Year Old Botte ) for 12 months and last 4 months in bottle."
